Panzanella

Ingredients
  • 1 each #10 Random Cut Tomatoes (Drained)
  • 1 C Onion, Sweet brunoise
  • 1 bunch Basil chiffonade
  • 3 cloves Garlic minced
  • 1 C Moscato D Asti
  • 4 oz Extra Virgin Olive Oil
  • 4 oz Red wine vinegar
  • 4 oz Balsamic vinegar
  • 2 oz Sambucca
  • To taste Salt and Pepper

Directions

Mix all ingredients excluding the bread and allow to rest for 3 hours. Combine 2 cups of the tomato mixture with 1 cup of the bread, allow to rest for 30 minutes then serve.
