1 15oz can Yellow Cling Sliced Peaches, chilled, not drained
1 bottle Prosecco or brut white sparkling wine, chilled
Simple Syrup (optional)
Fresh mint leaves to garnish
Puree peaches with juice
For each cocktail
Pour 2 tbsp peach puree into a chilled champagne glass
Slowly add 2-3oz sparkling wine; stir gently
Add a dash of simple syrup to taste (if needed)
Garnish with a mint leaf
OPTION: To make a non-alcoholic version, prepare as directed above except substitute chilled ginger ale for sparkling wine.
