California Peach Bellini

This recipe works for: Beverage

Serving Size: 6-8

  • 1 15oz can Yellow Cling Sliced Peaches, chilled, not drained
  • 1 bottle Prosecco or brut white sparkling wine, chilled
  • Simple Syrup (optional)
  • Fresh mint leaves to garnish


  1. Puree peaches with juice

For each cocktail

  1. Pour 2 tbsp peach puree into a chilled champagne glass
  2. Slowly add 2-3oz sparkling wine; stir gently
  3. Add a dash of simple syrup to taste (if needed)
  4. Garnish with a mint leaf

OPTION: To make a non-alcoholic version, prepare as directed above except substitute chilled ginger ale for sparkling wine.
