California Peach Bellini

This recipe works for: Beverage
- 1 15oz can Yellow Cling Sliced Peaches, chilled, not drained
- 1 bottle Prosecco or brut white sparkling wine, chilled
- Simple Syrup (optional)
- Fresh mint leaves to garnish
DIRECTIONS
- Puree peaches with juice
For each cocktail
- Pour 2 tbsp peach puree into a chilled champagne glass
- Slowly add 2-3oz sparkling wine; stir gently
- Add a dash of simple syrup to taste (if needed)
- Garnish with a mint leaf
OPTION: To make a non-alcoholic version, prepare as directed above except substitute chilled ginger ale for sparkling wine.
