Black bean and Chipotle Chili
Ingredients
- 2 tablespoons olive oil
- 1 onion diced
- 1 bell pepper diced
- 1 stalk of celery diced
- 2 garlic cloves minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon cinnamon
- 1 tablespoon tomato paste
- 2 cans diced tomatoes
- 1 tablespoon chipotle in adobo
- 4 cups vegetable broth
- 2 cans black beans
- ½ cup TVP
- ¼ cup fresh parsley chopped
- ¼ cup fresh cilantro chopped
- 2 teaspoons salt
Instructions
- In a large pot, heat 1 tablespoon of olive oil on medium heat. Saute onions, peppers, celery. Add 1 tablespoon olive oil and add spices and garlic, stirring, then add tomato paste.
- Next add black beans, diced tomatoes, vegetable broth, and tvp.
- Bring to a boil, reduce to a simmer. Cook for about 20 minutes. Add most of the parsley and cilantro, reserving some for garnishing.
Notes
Top with favorite topping such as Greek yogurt, jalapenos, or green onion, etc.
