In a large pot, heat 1 tablespoon of olive oil on medium heat. Saute onions, peppers, celery. Add 1 tablespoon olive oil and add spices and garlic, stirring, then add tomato paste.
Next add black beans, diced tomatoes, vegetable broth, and tvp.
Bring to a boil, reduce to a simmer. Cook for about 20 minutes. Add most of the parsley and cilantro, reserving some for garnishing.
