Cottage Cheese Wraps
Ingredients
For the Filling:
- 6.25 quarts low-fat cottage cheese 1%
- 6.25 quarts canned fruit (peaches, pineapple, pears, or fruit cocktail) drained and chopped
- ½-1 cup honey or maple syrup
- 4 tbsp vanilla extract
For the Wraps:
- 100 10in. flour tortillas
- 25 tbsp butter or neutral oil (for frying)
For the Cinnamon Sugar Coating:
- 6 cups granulated sugar
- 8 tbsp ground cinnamon
Instructions
Make the Filling:
- In a bowl, mix cottage cheese, chopped canned fruit, honey, and vanilla.
- Stir gently to combine.
Assemble the Wraps:
- Spoon filling into the center of each tortilla.
- Fold in the sides and roll up tightly like a burrito.
Fry the Wraps:
- Heat butter or oil in a skillet over medium heat.
- Place wraps seam-side down and cook until golden brown and crispy on all sides (about 2–3 minutes per side).
Coat with Cinnamon Sugar:
- Mix cinnamon and sugar in a shallow dish.
- While wraps are still warm, roll them in the cinnamon sugar mixture until well coated.
