Summer Peach Pasta Salad
Ingredients
- 16 ounces farfalle pasta
- 12 ounces frozen peas
- 6 ounces crumbled feta cheese
- 1 pint cherry tomatoes halved
- 1 shallot diced
- 1- 15 ounce can corn drained & rinsed
- 2- 15 ounce cans sliced peaches drained & rinsed
- ¼ cup olive oil
- ¼ cup lemon juice
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Bring a large pot of water to a boil. Add pasta and cook according to package directions. During the last minute of cook time, add the frozen peas to the water and pasta. Cook for remaining minute. Drain and pour into large bowl. Allow to cool.
- Once cooled, add feta, cherry tomatoes, shallot, corn, peaches, olive oil, lemon juice, salt, and pepper to the bowl.
- Stir to combine.
