Mini Peach Cobblers
A sweet, warm, gooey recipe that features canned peaches so you can skip the extra work of boiled and peeling fruit.
Ingredients
Peach Filling:
- 2 cans of peaches
- ⅛ cup granulated sugar
- 1 Tbsp. brown sugar
- ½ Tbsp. cornstarch
- ½ tsp. vanilla extract
- pinch of ground cinnamon
- 2 Tbsp. butter unsalted, melted (for the ramekins)
Crumble Topping:
- ½ cup flour
- ⅝ tsp. baking powder
- ¼ cup granulated sugar
- ½ tsp. vanilla extract
- 3 Tbsp. butter unsalted, melted
Instructions
- Preheat oven to 350°F.
- Dice the peaches. Place in a mixing bowl with the sugar, brown sugar, cornstarch, lemon juice, vanilla and cinnamon. Stir to combine and set aside.
- In another bowl, stir together all the topping ingredients until the dough comes together.
- Place 1 tbsp. of melted butter into each ramekin.
- Divide the peaches then sprinkle the topping on to the peaches.
- Place the ramekins on a baking sheet lined with parchment paper. Bake for approx 30-35 minutes or until the tops are lightly golden brown and peaches are bubbling.
- Allow to cool for a few minutes. Serve warm with vanilla ice cream or whipped cream. Enjoy!
